Orange Picante Chicken

I love to try out new recipes no matter if they are ones I created in my head, ones I found on-line or in a  cookbook. Over the years, I have tried recipes from a lot of chefs, one who seems to match my cooking style is Rachael Ray. As a mother, you've got to appreciate the concept of a 30 Minute Meal! Rachael Ray often says that her recipes are just methods. She encourages her viewers to take her recipes and make them their own. I "Lori-ize" almost everything I cook, tailoring the recipe to my families taste. I decided to combine these two ideas and what you see here is the result. Each week I'll create a meal based on a recipe and let you know what we thought. I will give you the original recipe and let you know how I "Lori-ized" it.  Hope you enjoy Tasty Tuesday!

I was flipping through a magazine and came across an ad for Pace Picante Sauce that had the recipe for Orange Picante Sauce Chicken.  If you are a follower of my blog you know I love a good chicken recipe and we also love hot and spicy food, so this recipe was right up our alley!

I can tell you that I did not measure anything in this recipe.  I used Hot Pace Picante Sauce.  I also chopped up the chicken into bite size pieces. I did this so I could pull our some chicken for Blake ahead of time.  I served it with rice.

This recipe was really good.  It was HOT!  If you do not like heat then I strongly suggest that you do not use their hot picante sauce.  I used a lot more orange juice and brown sugar than they suggested.

Next time I would probably use medium picante sauce.  I would also add the zest of the orange to bring out more of the orange flavor.  It also seemed to need salt and pepper which I'm really shocked I hadn't added myself since I usually do.

  1. Thanks for the tip about the spiciness....every time my kids eat something spicy they yell, "That's tasty!" and then wipe their tongues on their shirts! Not sure why they say tasty when they mean spicy?!

    I love chicken too!! I will add this to my must try one day... only was there a recipe in the list form?? did I miss that?? can I beg for one... even an estimate is ok... I roll without measurements too ... well... I estimate measurements... oh anyway!! have a great day!
