I found this recipe for Janet's Black Bottom cupcakes in Woman's Day Magazine.  So I decided it might be a good change of pace for Richard's co-workers.

I made these as stated, for the most part.  I used a dark cocoa powder, because that is what I prefer (if you hadn't figured that out already?)  I also made 1/2 as the mini cupcakes and the rest in an 8x8 pan because I didn't have mini cupcake wrappers and didn't want to wait until they cooled totally before making the second batch. 

I also had a bit of an issue getting the cheesecake on top of the chocolate batter.  As soon as it went off the spoon it sank to the bottom of the chocolate mixture.  So it became more of a filled cupcake instead of a topped one

I wasn't too thrilled with the chocolate part of these, but the cheesecake was rather yummy.  Richard and I actually decided that they tasted a lot better used in an ice cream sundae (I topped mine with homemade strawberry sorbet.... yummy!).  Richard's co-workers ate all the ones I send into them and seemed to like them well enough.

Next time... well there will be a next time, but with one BIG change.  I'm going to make them with brownies on the bottom instead of the chocolate cake mix.  I think with the homemade dark chocolate brownies as the base it will be a kick ass desert!
