I have to tell you I love the internet for finding recipes. You feel like making something? Put it in google I can almost guarantee you that you will get a whole list of recipes to pick from.

Last night I decided that I wanted to make cherry muffins to bring swimming with a friend today. I had cherries that were still good, but needed to be eaten up. I looked through a few different recipes and decided on one that sounded best to me. I then tweaked it a bit to fit the flavor profile I wanted.

I think the internet has greatly improved my cooking because I do not have depend on cookbooks or my prior knowledge to find and make a recipe. I love to bake, but baking is a science, so I like to let someone else figure out the chemistry and then I just adjust the flavors. Cooking, well there are no holds bard there. Once you figure out what you want to make... go for it. You have to trust your own sense of flavor and what you like together.

So next time you feel like having something, Google it... and try out a new recipe. You might find a flop, but most likely you will find a recipe you love!

Chocolate Chunk Oatmeal Cookies

Yes, I know it isn't Tuesday, but this isn't a new recipe to us either. I made these cookies this week because Richard requested them. He calls them the recipe he always says he doesn't think he will like, but loves to eat. Every time I ask him if he wants me to make this recipe he looks at it and says... no that doesn't sound good. Then I make it and he loves them. See sometimes the sum is a whole better than the parts (o:

I got this recipe off the web, but I couldn't tell you where for the life of me since I copied the recipe into my recipe file and didn't save the link (oops!) I have switched the flavors of this recipe, but the picture above is the original combination. If you want to experiment you can change the cake mix, pudding and / or chip flavors!

Chocolate Chunk Oatmeal Cookies

1 pkg white cake mix
1 pkg instant butterscotch pudding
2/3 c. rolled oats
½ c. vegetable oil
½ c. sour cream
¼ c. water
2 tsp. Vanilla
1 c. semisweet chocolate chips

Preheat oven to 350

Lightly grease cookie sheets

In a large bowl, stir together cake mix, instant pudding, and oats. Add oil, sour cream, water and vanilla; mix until smooth and well blended. Stir in chocolate chips.

Roll dough into 1 ½” balls and place 2” apart on the prepared sheets

Bake 8-10 min in oven. Allow cookies to cool on baking sheet for 5 min before transferring to wire racks

Makes 2 dzn.

Ok I'm a slacker... I didn't post about the brownies... SORRY! And then on top of that the pic I have is well... certainly not my best, but it gives you the idea... right?

I made a 9x13 pan of brownies (family size box) as directed. then cut the pan into quarters. I put 1 quarter on a plate and frosted it (vanilla frosting that I mixed in pure peppermint extract and green food coloring) then sprinkled it with crushed candy canes. Add another quarter of the brownies, frost and candy cane again.

You can make it by cutting it in half, but quarters is easier to get out of the pan. if you want to do it in a long log shape then I suggest putting parchment paper down on the pan before baking to make it easier to get it out of the pan

Since I know someone will ask for it... here's the recipe for Creme de Menthe pie (aka grasshopper pie)

Grasshopper Pie

40 Marshmallows melted in 1 Cup milk. Stir until marshmallows are melted. Cool Whip 1 pint of "all purpose" cream then put 5 Tablespoons of creme de menthe in marshmallow stir. Then fold this into the whipped cream. Pour into pie crust.


Pie Crust

24 Oreo cookies roll and put into buttered pie plate and press down.

refrigerate the pie until it's "set"

Mix:

1 c. soft shortening

1 ½ c. sugar

2 eggs

Add:

2 ¾ c. flour

2 tsp cream of tartar

1 tsp baking soda

½ tsp salt

Chill dough 2 hours

Roll into balls then roll in mixture of 2 Tbsp sugar and 2 Tbsp cinnamon

Bake on ungreased cookie sheet for 10 min @ 350

(to bake bars put into a 9x13 pan and bake for 20 min -- I begin checking around 15 min for doneness)

Cake Mix Cookie recipe

I've posted this recipe at least twice on my blog, but since you asked... here is it! You can use pretty much any flavor cake mix and frosting. I've also added mix-ins (chocolate chips, nuts, peanut butter chips, etc...) and they've still turned out good.

Cake Mix Cookies

1 pkg cake mix
1/3 cup oil
2 eggs
1 can of frosting

preheat over to 375
combine cake mix, oil, and eggs; stir with a spoon until thoroughly moistened

bake at 375 for 6-8 minutes or until edges are light golden brown

cool 1 min then remove from sheets
spread frosting over warm cookies

Sunday Scrapbook page

ok this is a two for one deal... here is the recipe for the chocolate chip cookie cheesecake bars I spoke about yesterday in my random weekend thoughts... and it's a scrapbook page too. That is an actual pic of the pan of bars. Blake helped me make them. He helped mix the filling, layer the cookies on the bottom of the pan and put all the cookie pieces on the top!

I usually don't participate in this, but I love baking cookies. Here are two simple easy cookie recipes! (Whenever I bake these to share I get asked for the recipe... so I figure they are worth sharing) I prefer to bake my cookies from scratch, but who has time these days? (oh wait I did that last week... anyway... here are two that are almost from scratch)

Chocolate Chip Cheesecake Bars

2 rolls chocolate chip cookies
2 (8 oz.) pkg cream cheese softened
2 eggs
½ c. sugar
2 tsp vanilla

line 9x13 greased pan with one roll of cookies, sliced thin to cover entire bottom

combine other 4 ingredients until smooth and spread over cookie layer

cover with second roll also sliced thin

bake @ 375 for 30-40 min

let set for 20 min before cutting

best served cold

because I had nothing to blog about today... hahaha... sorry I should have added this to the original but instead I'm clogging up your blog readers today!

here's the recipe I used for the ice cream below.... it is soooo simple and sooo good! I chopped up a dark chocolate dove bar in my food processor and added it to the mix!
